Everyone was baking banana bread during lockdown but six months on, you might be a little sick of the stuff.
If you still fancy a sweet treat that’s labelled as a bread (but we all know is really a cake), try this gingerbread loaf instead.
With the leaves turning orange and pumpkin spice lattes back on the menu, we know autumn is here and this spicy treat is perfect for the season.
It’s not quite a low ingredient recipe but you probably have a lot of the things hiding in the cupboard.
It’s so easy you’ll be able to whip it up in your working from home lunch hour.
Ingredients
- 225g plain flour
- 115g sugar
- 1 tsp cinnamon
- 1 teaspoon mixed spice
- 1 tsp ginger
- Pinch of salt
- 115g butter
- 2 tbsp treacle (or for a lighter cake, 1 tbsp treacle and 1 tbsp golden syrup)
- 150ml of milk
- One egg
- 1 teaspoon bicarbonate of soda
Method
- Preheat your oven to 180°C/fan160°C/gas 4. Put the flour, sugar, spices and salt in a bowl.
- Put the butter, treacle and milk in a pan and cook on a medium heat until everything is melted together.
- Create a well in the dry ingredients, add the wet ingredients and stir together, then mix in the egg (beaten well) and the bicarbonate of soda.
- Pour the mix into a greased and lined 2lb loaf tin and cook for 45-50 minutes, until a skewer comes out clean. Allow to cool and enjoy.
